SHIO KOJI HIKARIMISO (580ML) - SANRIKU

This is a raw salt koji made from domestically produced rice and sun-dried salt, enhancing the flavor of ingredients through protease activity. The protein-digesting enzyme "protease" contained in the koji softens ingredients and creates umami.
