This is a raw salt koji made from domestically produced rice and sun-dried salt, enhancing the flavor of ingredients through protease activity. The protein-digesting enzyme "protease" contained in the koji softens ingredients and creates umami. It can be used for marinating meat and fish, in dressings, seasoning stir-fries and pasta, and in soups, among various other dishes. Add it to your regular cooking for a unique and delicious twist!
